Profile
Giovanni Novella, the owner and chef, is from the town where Corallini gets its name. People have been diving for coral at the seaside community of Torre del Greco for centuries, earning the moniker Corallini, meaning small coral. Nearly every day, Giovanni fished from the community of Torre del Greco on the southern Italian coast where he grew up. Gio’s cooking highlights the greatest qualities of sea bass, octopus, crabs, or shellfish in almost every dish because he grew up swimming in seafood. At 14, he enrolled in a neighboring Sorrento cooking school before continuing to an elite pastry program in Amalfi that focused on desserts from the south of Italy. He worked in a few local kitchens throughout his time in school before moving on to restaurants in Germany, Greece, France, and even a high-end cruise liner in South America.
Chef Gio strives to bring the sea to your table at Bar Corallini, along with homemade mozzarella, burrata, and fresh pasta and pizza. The trendy and inviting neighborhood beach joint is completed by delectable cannoli and traditional Italian cocktails. The bar also serves a wide range of cocktails and features a robust wine list. For non-drinkers, they can ask for the Krombacher Non-Alcoholic Hefeweizen.
