Vinaigrette ATX is tucked away off South Congress in a low-slung, mid-century structure from the 1950s, once known as the Pig Stop. This building is shaded by one of the city’s oldest Live Oak trees. The area is bright and uplifting both inside and out thanks to intersecting gables, a gorgeous bright green tile wall that mimics the lush outside, sustainably harvested wood flooring, and handmade galvanized window walls. It appears to be a happy greenhouse for people.
Vinaigrette is committed to fresh produce, sustainable farming, and the environment’s health. Their farm, which is ten terraced acres along the Nambe river, is a marvel of agroecological farming and supplies the restaurant with fresh eggs as well as seasonal fruit and vegetables.
Their drinks menu features a variety of virgin tinctures and tonics. You can try their Ginger Turmeric Tonic, which is carefully made with anti-inflammatory turmeric, ginger syrup, carrot juice, lemon, and seltzer.
