Oven and Shaker is a pizzeria and cocktail bar that combines tradition and inventiveness in the realm of wood-fired Neapolitan pizza and Italian street food, drawing inspiration from the frequent journeys to Italy taken by six-time James Beard nominee Chef Whims. They make their own dough with a special 70-year-old sourdough starter, and hand-toss and fire each pizza to order in their imported Milanese wood-burning oven (brought over from Italy brick for brick). Produce is sourced by Oven and Shaker from Blue Truck Produce, Cascade Organics, and Imperfect Produce. They obtain their meat and dairy from artisanal Italian and American suppliers who use sustainable, hormone-free farming methods.
The menus contain a lot of gluten-free items. For any of their pizzas, a gluten-free crust alternative is also available. Additionally, the restaurant’s ambiance is heavily scented with flour because they bake their own pizza dough there.
The bar aims to provide visitors with a memorable beverage by serving imaginative original cocktails, a large selection of “sessionable” local beers, and old world-class wines. Their list of alcohol-free drinks includes a ginger ale made from scratch. Its ingredients are freshly pressed lime juice, housemade spicy ginger syrup, “1:1” simple syrup, angostura bitters, and soda water. Housemade sparkling drinks are also available.
