Sebastien Thuriere, a former international soccer player, and his brother Maxim Thuriere, a local entrepreneur, founded COPA in 2019 with the intention of creating a distinctive experience that reflects their Haitian and French ancestry as well as Central American elements from their upbringing.

Copa offers a distinctive perspective on the cocktail lounge experience and flavors of Latin America and the Caribbean blend with a tapas-style Mediterranean touch. It is located in the center of Downtown St. Petersburg’s Edge District. Fans of craft cocktails, tapas plates, and lively Afro-Latin music can find a happy medium at Copa. The Lavender Lemonade is made with lemon, sugar, and lavender. For more complex tastes, try The Hangover. This mocktail is perfect for those who are still recovering from a night of partying the day before. The Hangover is made with coconut water, lemon, pineapple, and ginger beer.
