Ben Norton, the executive chef, redefines what it means to cook and eat in the South by reinterpreting the abundance of Tennessee and the surrounding region via an ingredient-driven cuisine that starts with the rediscovery of heirloom crops. Their menu varies regularly based on what the daily producers in the area supply. There are restrictions on what can be put on the plate at Husk. It won’t be entering through the door if it doesn’t arrive from the South. The resulting cuisine explores the truth of Southern food rather than trying to rediscover Southern cooking. Husk’s cuisine is built on seed-saving, heirloom husbandry, in-house pickling, and charcuterie programs run by Executive Chef Ben Norton and his culinary staff.
